AUNTIE MAUREEN'S YORKSHIRE PUDDINGS

250g(8oz)Plain Flour, 4 medium size eggs, 1tsp salt, 250ml(6fl oz) fully skimmed milk, 4 tbsp vegetable oil.

Method

Mix together all dry ingredients, add milk and 4 beaten eggs. Mix until a smooth batter. Grease, 4 500g(1lb) loaf tins, add 1tbsp of oil to each tin, and place in pre-heated oven 180c,350f,gas mk4 until hot (5-6 Minutes).Whisk mixture hard for 1 minute prior to adding mixture to tins,and bake for 25-30 minutes, at this stage each pudding should have risen well up the sides of the loaf tins.

Secret

Oil in tins should be hot before adding mixture. Mixture should be well beaten. This dish goes well filled with onion gravy, sausage(toad in the hole), stewed steak or liver & onions.
