BLACKCURRANT SOUP
Grocery Store 700g(1½lb) blackcurrant's. 1.4ltr(2½pints) water. 15g(½oz) corn flour. 100g(4oz) sugar. 10ml(2tsp) lemon juice. 30ml(2tbsp) white wine. lemon slices, optional. Method Wash and top and tail the blackcurrant's. Put into a pan with the water and simmer until tender. rub blackcurrant's and water through sieve, return to the pan and reheat to boiling point. Mix corn flour and sugar with a little water, slowly stir into the soup and cook for a further 10 minutes until thickened. Add the lemon juice and wine to the soup. Refrigerate until required. If you wish, serve garnished with lemon slices.
