Auntie Maureen's Recipe of the Week
PRAWNS ON TOAST Grocery Store 8 sorrel leaves, 2 garlic cloves, finely chopped, 4tbsp mayonnaise, ½ tsp hot chilli sauce, 45g(1½oz) softened butter, 12x2cm(3/4in) slices of french bread, cut at a slant, 1tbsp olive oil, 12 large raw tiger prawns, peeled. Serve with lemon wedges. Method Place the sorrel, garlic, mayonnaise, chilli sauce and a little salt in a food processor and blend until smooth. Butter the bread slices on each side and fry the bread in the hot oil until golden brown on each side. Drain on paper towels and keep warm. Add the prawns to the pan and cook 1 minute on each side until they turn a rich pink. Spoon the sauce onto the bread croûtes, arrange the prawns on top and serve with lemon wedges.
